Spaghetti alla chitarra is a long-format Gragnano pasta. They are produced with durum wheat semolina mixed with water from the springs of the Lattari Mountains and subsequently modeled with bronze dies.
The name derives from the guitar, the instrument used to make this pasta. No, music does not matter much, because in this case it is a frame made up of steel wires arranged a few millimeters apart on which the dough was pressed to obtain many homogeneous and square section spaghetti.
The groove and robust consistency makes this spaghetti format particularly suitable for holding meat and fish sauces.
